11:37 pm - hi!
Hi there!

I've been on Livejournal for ever, like since 03, but took quite a hiatus and now i am back, and needing some new friends. I am 25 female (as if the name and picture didn't give that away) I am in a relationship. I am fun, random, love to laugh, and open...as well as open minded.

I'm looking for people who are not into the teeny-bopper stuff, ok let me rephrase that, not only into the teeny-bopper stuff =p I do enjoy intelligence but silly-ness is how we stay young, granted im still very young.......

I've met some really awesome people through this community, and since there has been a recent exodus to facebook, I figured it was time to see who was still a LJ loyalist :P

My journal is kind of a mixed bag. Sometimes its just random thoughts, sometimes I talk about the goings on in my life, sometimes I complain, and sometimes I ask for advice.

I just had a baby 2 months ago and she is the sweetest thing in the world, but her Dad gets on my nerves and thus, is the subject of most of my complaints. That and losing the baby weight. I have filters for all these things though, so if you're not interested and wish to opt out, that is all fine and dandy with me.

I usually only remove people that have ditched their journals for months and months, if it turns out I just can't bear reading your entries because you are spewing some hateful nonsense constantly that I just can't get with, or if you've been on my f list for over a year and have never left a comment. I don't require for you to comment every entry or even a lot. Hell, you don't have to comment at all if i know you're reading. But I am not into friend collectors.

I don't always comment but I always read.

I don't have any recommendations per se, but I tend to despise racists, judgmental asssholes, and homophobes.

05:52 pm - new crockpot smell?
I just bought my first new crockpot. I washed the stoneware and lid, dried it carefully, and put together some beef stew. When I turned it on (set to High for 4 hours), I noticed a kind of smell like - burning plastic or, er, general electrical stuff? Is this normal for a new crockpot on first use, or should I be worried (and unplug it before it burns the building down!)?

It's a Crock-Pot brand Smart-Pot, the 5.5 qt with the one-touch control panel, if that helps.

(not sure of the appropriate tags, mods, so I guessed)

ETA: Apparently this is normal. Thanks, guys! Now I just have to wait for the stew to start smelling delicious :)
Current Mood: [mood icon] worried

12:12 am - Salmon risotto for one
Note: I haven't tried making this myself yet. I just found a recipe book called Slow Cooking for Yourself and I know that at least a few people have asked for recipes for small crock pots, so I thought I'd share a couple of the recipes in it.

Salmon Risotto

1 1/2 teaspoons (3/4 ounces or 20 grams) butter

Four scallions (spring onions), finely sliced

1/4 cup (two ounces or 50 grams) Italian Risotto rice

Two tablespoons (30 ml) white wine or stock

3/4 cups (six ounces or 175 ml) vegetable stock

Five ounces (150 grams) salmon fillet, cut into bite-size pieces

Salt and pepper to taste

One tablespoon (15 grams) dill weed

Grated Parmesan cheese

Put butter into crock pot and turn pot to high setting. When butter has melted, stir in the onions (scallions) cover, and cook for 30 minutes.

Add the rice and stir to coat with butter, then add the wine (if you're using it.) Add the vegetable stock, stir, then re-cover and cook for 40 minutes, stirring once halfway through cooking time.

Season the salmon pieces with salt and pepper and stir into the rice mixture. Cook for another 20 minutes or until salmon is opaque and rice is tender. Stir in the dill, then switch off the crock pot and let it stand for a minute.

Stir, then spoon onto a warm plate or bowl and sprinkle Parmesan cheese over it. Serve at once with a slice of French bread.

01:25 am - Chicken and Corn Chowder
I invented this recipe yesterday, and it turned out quite tasty. There a few things I'd do differently next time, and I'll put that at the end after the original concoction.

Ingredients:

1 15 oz. can whole kernel corn
1 15 oz. can cream style corn
1 18 oz. can Campbell's creamy potato soup with roasted garlic
1 12 oz can evaporated milk
About a cup of chicken broth
a couple of good sized handfuls of frozen shredded hashbrowns
about 1.5 pounds boneless, skinless chicken breasts, cubed
6 slices bacon, cooked and broken into pieces
a pinch of cayenne pepper
salt and black pepper to taste

Just plop everything into the crock pot and set on low for 8 hours. I have a six qt crock, and it was more than half full, so you'll definitely want to use a larger crock for this recipe. My fiance and I both had seconds last night, and then leftovers today, and there's still some left.

Okay, on to the modifications. Next time I'll use two cans of the potato soup and completely ditch the chicken broth and hashbrowns. I'll also add in some chopped onion, bell pepper, maybe some celery, but I didn't have any on hand this time. The cayenne pepper adds just a teeny bit of kick, and makes it a little more interesting. Enjoy.

10:20 pm - Happy story...
So I thought I'd share a story about my teaching experience that might warm a few hearts...

Has anyone (especially you fellow young, single, female teachers) had students (high school) offer to set you up with anyone? I've gotten it for years from my students.

Well last spring I finally listened to my students and accepted one of their recommendations as a facebook friend. These were students I had taught for several years. I teach at a charter school, that at the time was 6-12th grade. I had these students as 7th graders, then moved up to 8th.. to 9th.. to 10th.. to 11th.. now I had a few of them as 12th graders in my AP class. A few of them worked at a local museum under a certain supervisor they believed would be "perfect" for me.

So after much pleading, we became friends on facebook, and eventually went on a date...

Well long story short, he and I are now engaged. So, I guess this is just a story to show that your students could in fact actually set you up with the person of your dreams :-) Oh, and I guess the one student actually cried when she found out we were engaged (they are now all off at college now, this year as freshmen - but will definitely be invited to the wedding!)

Happy Holidays everyone!

07:22 am - Minestrone
I made some amazing slow-cooker Minestrone soup a couple times recently, and I have to share!

Slow Cooker Minestrone

(ideal size slow cooker is the 6 quart size)

1 large onion, chopped
4 carrots, sliced
3 ribs celery, sliced
2 cloves garlic, minced
1 TBSP olive oil
6 oz can tomato paste
14.5 oz can chicken, beef, or vegetable broth
2 15 oz cans kidney beans, undrained
10-12 oz pkg frozen green beans
2-3 cups chopped cabbage (i used shredded cole slaw mix for convenience)
1 medium zucchini, sliced
8 cups water
2 TBSP parsley
2 TBSP italian spices
1 tsp salt
1/2 tsp pepper
1 cup small pasta (i used barilla mini bowties)
grated parmesan

1. saute onion, carrots, celery, and garlic in oil until tender.
2. combine all ingredients except pasta and cheese in slow cooker
3. cover, cook 4-5 hours on high, or 8-9 hours on low, adding pasta
1 hour before cooking is complete.
4. top individual servings with parmesan.

Note: This makes a good 8-10 servings. I ended up putting the rest of the soup into plastic containers and freezing them for lunches!

First time I made it, I used frozen green beans, second time I used a bag of frozen mixed veggies (green beans, corn, carrots, peas.. I liked the mixed veggies better!)

Also: I used 1 tsp of salt, and it wasn't seasoned enough, so i salted again before serving and it was perfect!

04:28 pm - Some happy news from the week
Just came back up to my classroom from the office, where a former student and her mother were visiting.

Mom said, "Tell Mr. Schwitzer what you told me about that math test."

Former student said, "I got an A on the test, because I remembered that book you used to read to us about Sir Cumference."

I got a little choked up.

Hi everyone! I've been on LJ for about 6 years, about 4 years previously known as [info]3_legdcat and almost 2 years with my current journal. It's been a while since I whored myself out but since I've recently gotten a paid account and made a few upgrades to my account I decided to cast a net out there. Anyway...

About me:
-40 year-old divorced male. Divorced just over a year, with a 6 y/o daughter who lives with her mom.
-Currently not in a relationship.
-Sexually open minded. I consider myself hetero-flexible.
-Work as a research analyst for a legal consulting firm.
-Planning to go back to school for an MBA in 2010.
-interests include outdoor activities, sports, reading, movies and travel
-politically Libertarian but don't flaunt it.
-religious but don't flaunt that either

What I'm looking for:
Other open-minded people.

What I'm not looking for:
Anyone who feels like they have to be right all the time.

So check out my profile and if you see anything you like, don't hesitate to send me an add request!

Hi there. I've been on LJ for about 5 years and have met some great people. Looking for a few more folks to add to my list.

Me:
- female
- Chicago resident, originally from Hawaii
- married with two cats
- drummer in a band (http://97-shiki.com/)
- aspiring fiction writer (sf & fantasy)
- interests include: fitness, food, music (especially non-mainstream music), travel, reading
- politically left-of-center, but not rabid or humorless about it ;)
- not religious, & don't care if you are or aren't
- don't watch much TV
- don't have any kids, and while I'm not anti-kid or anything, I'm not that interested in every little thing they do either. I'm not saying 'don't add me', just that I might not have much to say on that particular subject.

What I'm looking for:
I don't have some big list of "qualifications". I'd just like to meet some new and interesting people, whether we share a bunch of the same interests or not (but artists, musicians, writers, and weirdos are especially welcome). It'd also be swell if you were interested in interacting (commenting, replying to comments) at least occasionally (I know peeps have lives outside of the internet).

What I'm not looking for:
People who think being "blunt" and "brutally honest" is awesome. Not to sound like a giant hippie or anything, but to me, kindness and courtesy matter a lot.

08:13 pm - Writer's Block: Sense and sensibility

If you could keep only one of your five senses--taste, touch, smell, sight, or hearing--which would you choose and why?

Submitted By [info]chibikanada

Sight, I think it's the sense most likely to allow you to live an independent life.

I'd first give up taste, it might help me eat less and then I could eat only healthy things and not know if they taste like bum.

Next would be between touch and smell, but it would be a tough call. I guess I'd keep touch over smell.

Last was between hearing and sight, but while I would miss music and hearing the voices of those I love, I would never want to give up seeing the beauty in nature, those little things that surprise you and overwhelm you with their beauty until you want to explode. Watching your children grow up.

Yeah, I'd keep sight.

Is anyone else just tired? I know we just had Thanksgiving break, but I'm just exhausted. I'm not only teaching full time, I work 2 part time jobs. (And yes, I know that in a society right now that we're in a recession, that I probably shouldn't be complaining) I need Christmas vacation .... desperately.
My students have gone a little nutty recently. I was out the Friday, Monday and Tuesday before Thanksgiving, and was back for the 1/2 day before Thanksgiving. We're going on a field trip on Monday, which I know they're excited about. They had all had a violin Christmas concert last night, and they have another concert next Friday that they're playing at the aquarium. Not to mention that Christmas itself is coming (and of course, we're counting down to that in school). So they're all excited about a lot of things and their stress levels are elevated, and their patience is wearing thin with each other, too. We're in a small school, so everyone knows everyone else, and its like a family, and all the students get along like brother and sister, taking the good with the bad in all that it encompasses. The great sympathy, empathy and tenderness that they show each other, but they have sibling rivalry fights, too.
I have very little patience left, and things that normally don't throw me off really REALLY have been. I'm finding myself doing all of those "filler" projects that are for those days that you really can't stand doing anything anymore. I've even shown them movies, which isn't something that I normally do (save for special occasions).

Is anyone else finding that this year is really draining on them?
